<abstract> <p>Viscosity of glucomannan (GM) needs to be modified support its application for spray drying encapsulation. The purpose this study was investigate degradation GM using cellulase that fulfills viscosity in a spray-dryer specification. This hydrolyzed (HGM) subsequently spray-dried encapsulating iron. Lower initial concentrations (0.5–1%) reached approximately 0.30 Pa·s which allowed after 100 min 10 mg/L cellulase. Meanwhile, 1.5% and 1.7% did not reach the target even 300 min. n<sup>th</sup>-order model most suitable fitted reduction ≤1.5% concentration (coefficient determination, R<sup>2</sup> > 0.98), whereas Mahammad 1.75% (R<sup>2</sup> = 0.99).
